With extremely limited experience: it is all about occupancy rates, room rates and upsells. That in turn reflects itself in the variable staffing, food ordering, etc. A/R is minimal unless you have large corporate plans since we all pay by credit card or cash.
Otherwise all the standard issues pertain.

At the meantime, I also found that the most important KPI is RevPAR, that measures the revenue per available room. This KPI is measured on a daily basis and if a negative variance measured, the operation must align the costs immediately in order to meet the budget.
